Freeze dryer: Working principle of freeze dryer
A freeze dryer consists of a refrigeration system, a vacuum system, a heating system, and an electrical instrument control system. The main components of a freeze dryer are the drying chamber, condenser, refrigeration unit, vacuum pump, and heating/cooling device. The working principle of a freeze dryer is to first freeze the item to be dried to below the triple point temperature, and then, under vacuum conditions, the solid water (ice) in the item is directly sublimated into water vapor and removed from the item, thus drying the item.

After pretreatment, the material in the freeze dryer is sent to the quick-freezing chamber for freezing, then sent to the drying chamber for sublimation and dehydration, and finally packaged in the post-processing workshop. The vacuum system establishes a low-pressure condition in the sublimation drying chamber, the heating system provides the latent heat of sublimation to the material, and the refrigeration system provides the required cooling capacity to the cold trap and drying chamber.
Freeze drying is a technology that uses the principle of sublimation for drying. It is a process in which the substance to be dried is quickly frozen at low temperature, and then, under appropriate vacuum conditions, the frozen water molecules directly sublimate into water vapor and escape. The product obtained by freeze drying is called a freeze-dried product.
The substance remains at a low temperature (frozen state) before drying, and ice crystals are uniformly distributed in the substance. The sublimation process does not cause concentration due to dehydration, avoiding side effects such as foaming and oxidation caused by water vapor. The dried substance is in a dry sponge-like porous state, the volume remains basically unchanged, and it is easily dissolved in water to restore its original state. It largely prevents the denaturation of the dried substance in terms of physical, chemical, and biological aspects.
In recent years, both domestic and international research has begun exploring and using continuous vacuum freeze dryers. Continuous freeze dryers are suitable for the production of products with a single variety, large output, and sufficient raw materials, especially suitable for the production of pasty and granular products. Continuous equipment is easy to achieve automated control, simplifying manual operation and management. Its main disadvantage is its high cost.
To ensure the quality of freeze-dried products and energy saving, combined freeze-drying equipment, such as spray freeze-drying equipment, is often used in combination with other drying equipment.
